July 2009

Where did this summer go? Granted, being out of town almost all of June, a few days in July and a weekends will make 2 months go insanely fast! I don’t have a ton of meetings so I am hoping to just plow though a few things on my never ending project list.

Breakfast will be a Green Monster made with a banana, almond milk, spinach, Amazing Grass Superfood, and a few ice cubes. It will be tasty! I have a Fage Strawberry Greek Yogurt to enjoy as well.

Snacks are a Lemon Larabar, string cheese, a handful of nuts and veggies. I am trying the new sandwich pockets from Kashi that are basically a somewhat healthy hot pockets (which I loved and lived on in college) and more veggies.

We are having some friends over for an Italian themed dinner to play off of our wedding and trip in June. We are making a Baked Pasta from Giada on the Food Network and a tomato and mozzarella salad. Everyone is bring a dish to pass and anything that would like to drink.

I meet Mike at the Mall of America to enjoy a happy hour at Crave and take a few things back. One of the dresses I had purchased at the Limited a few weeks ended up having a huge hole in it, I went to put it on one morning and you could see a nice big chunk of skin smile_omg

We each ordered a glass of the house red and opted for 3 of their happy hour snacks, a mini pizza, a spicy salmon roll and chicken in a spicy sauce. They were ok, but nothing overly special, our service was good and the prices were really good for a happy hour so I think Crave will do well.

Mike is currently unstaffed and there is a good potential that he could be on a project in town (for the first time in his 12+ year career and our almost 6 year relationship) but there is also a chance he could get staffed internationally and we could end up somewhere for a few years. We had a good conversation about what we want to do and where we want to be, I think we would be really like an international project. It would be a great experience and I could teach English or find some sort of job while he did his project, on the other side having him in town would be amazing. We have never had a “normal” relationship where we have both been home all week and have had the chance to come home to each other for more than a night or two in a row. With me doing a big volunteer commitment and my MBA while he was out of town the last few years. We have had a crazy few years- add in all of our travel, other life events and I am amazed we have made it as far as we have.

Now that my big stuff is done it makes Mike being out of town even harder, so we are in a wait and see pattern right now. And for this type A, planner it is making me really really crazy! So we wait, and time will tell where we will be and what we will be doing.

9 Hours Flying By…

July 30, 2009

It was another busy day with not a ton of time for food, I made a Green Monster before heading to work this morning with a banana, almond milk, Amazing Grass Superfood, 2 big handfuls of Spinach and a few ice cubes. I was in a hurry so I drank it in the car on the way to work while sitting in a bit of traffic. I had a meeting right away so I was in a big rush to get in and get a few things organized.

I had a Coconut Cream Pie Larabar (which I love), some peppers, cucumbers and string cheese for a snack.

Lunch was a leftover Portobello burger and the leftover tomato and bean salad. Quite tasty :)

Yesterday turned out to be a pretty good day! I had a really good lunch with my mentor, she had some really good things to say about my frustrating work situation. My big takeaway from the lunch was that I control the things around me, and I can make the best of the situation and at the end of the day if I know that I did my best I can be proud of that. No one can discount what I am proud of. If I know I did great work and they don’t have the same perspective of that, it is their loss. I have a lot to offer to any working environment.

Sometimes you just get stuck in a situation that isn’t ideal, that is what is happening right now. Work is less than rewarding, I feel very unsure about my future and where we want to live and what we want to be doing. I just need to make sure I am trying my hardest to take a positive spin on the situation and let things go at the end of the day.

I was glad I had a happy hour to head to after work, it was nice to just chat with 11 women who all have unique experiences and a lot to say. I always leave the happy hours for this group feeling really positive. At happy hour I had 2 glasses of their house Shiraz, which was drinkable but not memorable and a tiny happy hour pizza.

On the way home I stopped at Whole Foods to stock up on Greek yogurt, popchips and a few other things. It was after 9 by the time I got home and I headed straight to bed, I was exhausted.

An Excellent Dinner

July 28, 2009

I ran to the mini farmers market over lunch and picked up a huge bunch of basil for a $1! What a great deal, it is normally $3-$4 at the store. I also picked up some wax beans that had been picked that morning. I stopped at Super Target on my way home from work [...]

Disappointing Dinner

July 25, 2009

I hate when you have such high expectations for dinner and it doesn’t live up to them. That is what happened to us last night, we have been wanting to try Sanctuary for a long time so we made reservations for the four of us at 7:30. We were seated right away and checked out [...]
