I have been having some migraines lately and they seem to keep getting worse. I have a prescription that I take when I feel one coming on but it doesn’t seem to be as affective as it once was. I worked from home between napping today and am finally feeling a bit better.
I didn’t eat much during the day so I knew I needed to attempt to eat a bigger dinner, we had a recipe from Real Simple Picked out and the pork was in the fridge so we got cooking. We made the Trader Joe’s Harvest Grain mix that I absolutely love, it has such a great flavor! There was some leftover arugula and a new tub of spinach in the fridge so I threw together a quick salad with some radishes, cherry tomatoes, feta, and a few pistachios.
We cut the pork into cubes and loaded them onto skewers, we grilled for 10 minutes and during the last 2 minutes basted the skewers with organic low sugar apricot preserves mixed with some white wine vinegar. They turned out a pretty well but were a bit dry.
