Whirlwind Monday

This day flew by! After work I ran to the Natural Foods Co-Op to get Greek Yogurt and a few ingredients to make dinner and Angela’s Vegan Peanut Butter and Jam Bites. Mike ended up not needing to fly out until around 8 tonight so we had a chance to spend some time together before I ran him to the airport- a very nice bonus on a Monday!

My lunch today turned out really well- we all got along great and had really good discussion! The purpose of theses lunches is to connect us with other women within my (most male) company. I really enjoy them and find them helpful. Since it was almost 80 degrees outside we voted to sit outside at Great Waters and enjoy the weather before its much much colder. I opted for the portobello sandwich and removed the top bun and ate about 3/4 of the sandwich and a few of their potato chips that are housemade and seriously addictive!IMG_1668

 

I had planned to make Gingery Pork and Cucumber Pitas from September 2009 Real Simple but I substituted Ground Turkey (from The Ferndale Market) instead of the Pork, these turned out really well! The recipe says 15 minutes of prep time and total time and this is true- we were sitting down to eat within 20 minutes, pretty darn good for a weeknight. I couldn’t find the link online so here is the basic recipe

1/4 cup rice vinegar

2 tsp sugar

Salt

2 Cucumbers (I used 1, thinly sliced)

1 Jalapeno (thinly sliced)

1 tbsp Olive Oil

1lb Ground Chicken, Turkey or Pork

1/4 cup Hoisin Sauce

1 tbsp Fresh Grated Ginger

Pitas (I used Whole Wheat)

(Serves 4)

Mix rice vinegar through Jalapeno and let sit and least 5 minutes, cook ground meat for 5-6 minutes and then add Hoisin Sauce and Ginger, spoon into pitas and serve. Yum!

I had dessert around 8:30 and tried 2 of the Peanut Butter and Jam bites and let me just, um wow! It’s a party :) They look awesome! I used a mix of apricot, strawberry, raspberry and a few Mint M&M’s at the end.

I am heading to bed, on the days I get up at 5:30 to hit the gym I am exhausted by 9pm!

Back to a Routine

September 14, 2009

My goal this week is to get back into my routine with the gym. I would like to get to the gym at least 2 mornings and then over the weekend. To make this goal I am aiming for Monday and Wednesday morning workouts with a possible evening one on Tuesday or Thursday depending on the week. I can get back into this and feel jazzed about working out. Thankfully food has been pretty good lately so I have half the equation going for me.

I boiled six eggs to have for breakfast this week from the eggs I purchased at the farmers market and I wanted to use them up before they go bad, I don’t want to waste them. I am having 2 hardboiled eggs with a Chobani Greek Yogurt, lots of protein to start my day.

Snacks are string cheese, an apple, grapes, and a few Trader Joe’s gingersnaps. This will definitely tide me over between meals.

I have a Quarterly Networking Lunch with my women’s group for work, each quarter we are paired with 3 others and we meet to help introduce us to more women within my company. The group decides where they would like to go when we meet in the lobby, hopefully it is somewhere good!
