Yes, I am that lady who is being tofu at the grocery store! I never thought I would say that. I received the new Clean Food cookbook from a blog I read and I was super excited to page through and find something to make.

The Fall section was calling my name and I saw a recipe for a Tofu Pumpkin Pie with a Gingersnap Crust. We had everything in to make this except for Gingersnaps, I was pretty impressed. I got baking and was ready to put them in the oven when I realized I forgot to put pumpkin in the mix, I would have to start all over! This is why you should not multi task while baking, so back to the normal grocery store I went to buy more tofu.
1) I am impressed my local Cub had tofu
2) I got some really funny looks while checking out
I got back to baking and redid the recipe, I made a minor modification and made mini tarts in muffin cups instead of one big pie. These are delicious and the gingersnaps make a nice crust, just a word of warning that they get pretty dark.

My next baking adventure, well not really baking but a sweet chex mix. I used Cheerios, Chex, Peanut M&M’s, Butter Pretzels with Almond Bark melted over them. This stuff is addictive! No baking involved just mixing, melting and spreading to cool. A quick dessert that you can modify the ingredients to your tastes. 
Since I was so busy baking dinner ended up being a few veggies to snack on, a huge glass of V8 and then a pumpkin tart for dessert. Yum! The rest of the evening will be spent relaxing, and then hopefully a good night of sleep.

Back to the grind, after a great weekend. The forecast for today is only a high of 60 which is the coolest it has been in quite a while. I think fall might be here, sigh. Mike has a 6:40am flight so he will be up super early and I will probably be up about 5 to head to the gym (at least that is the plan) Breakfast is a Blueberry Oikos and a Fuzzy Kiwi, good combo!

I have a plethora of veggies and an apple for snacks throughout the day and a nice big piece of the Turkey Meatloaf that was made on Sunday. A very fall like comfort food. I grabbed some hummus to go with my celery, that is the one veggie I can not eat plain. Usually I opt for peanut butter but the crazy fridge food stealers at work end up eating it. Yes, we have fridge food stealers and I always find things missing! Who does that?
