Oats and Ice Cream

November 4, 2009

But not together ;) I was craving something breakfasty and we have a ton of quinoa so I started playing in the kitchen and came up with this recipe:

Vanilla Cinnamon Breakfast Mix

1 Cup of Quinoa (rinsed)

1 Cup of Steel Cut Oats

3 Cups of Water

Dash Of Cinnamon

Dash of Vanilla

Handful of Currants

Drizzle of Agave

Mix Quinoa, Oats and 3 cups of water and bring to a boil

Cover, Reduce heat and simmer for about 10-15 minutes

Stir in Cinnamon, Vanilla and Currants and mix together

Serve with a drizzle of agave and a tablespoon of nut or fruit butter

This is delicious! A nice touch of sweetness and very hearty. This is what Clifford did while I was cooking, he was one tired puppy. We went on a 45 minute walk and he was ready for a nap as soon as we got home.

So where does the ice cream come in? I drive by Culvers every single night and I can usually resist but when the sign says Butterfinger Pecan the car suddenly veered to the right and was pulling through the drive through ;) I was restrained and only got one scoop in a small dish, and it was oh so good. It has been months since I have had a bowl of cold creamy goodness. I have my fill for a while now.

I am cleaning up the kitchen and am heading to bed soon!

What is your favorite ice cream flavor and from where?

5 A Day

November 4, 2009

I am having a great start to the day with the rest of the Green Monster that I made last night, I love how I feel when I drink these. Lots of energy and feeling good about getting servings of greens in right away in the morning. Clifford and I went for a short walk this morning and I am just getting ready to head out the door.

I have another lunch event today so I packed snacks to get me through the day, carrots, a honeyscrisp apple, string cheese and 1 egg. The last few weeks I have done really well with getting in servings of fruits and veggies, at least 5 a day.

Do you get all of your servings of fruits and veggies, what are some of your favorites?
