Balsamic Baked Potatoes

We were looking for a good roasted potato recipe for dinner this evening and I found a Balsamic Baked Potato recipe in the November issue of Everyday Food.

 

Ingredients

  • 1 1/2 pounds new potatoes, halved or quartered
  • 3/4 cup low-sodium chicken broth
  • 1/4 cup balsamic vinegar
  • 8 garlic cloves smashed
  • Fresh Rosemary
  • Salt and Pepper

 

Directions

  • Preheat Oven to 425
  • In an 8 inch square baking dish combine potatoes, broth, vinegar, garlic and rosemary. Season with salt and pepper
  • Bake until potatoes are tender and liquid is reduce to a glaze, about 1 1/4 hours, tossing twice.
