Since it was so cold today I was majorly craving soup in an attempt to get warm. When I read 5 Dollar Dinner Mom’s blog today and saw the recipe for Mushroom Barely Soup I knew I had just the soup to make. We had leftover mushrooms in the fridge so all we needed was some barely, an onion, and some dinner rolls.
We threw the soup together pretty quickly and let it simmer for about 30 minutes to get the barely nice and tender. It definitely hit the spot for warm comfort food, and the large mushroom pieces were so tasty. The dill was a nice touch and not something I would normally associate with soup. To go along with the soup we had mini sandwiches on whole wheat dinner rolls with a tiny bit of butter, some Trader Joe’s natural ham and a slice of cheese broiled for 1 minutes. The cheese got nice and melted and the Trader Joe’s natural ham is so good. A quick but satisfying dinner.
Tonight’s plans involves relaxing on the couch and watching Mike’s Badgers play Michigan State in basketball. Enjoy your evening!
I know that I live in Minnesota but wow is it cold out! It was -1 when I left the house at about 5:40 this morning to head to the gym and the windchill was about -15 or -20! It was a cold walk into the gym from the far edges of the parking lot. The resolutioners are still in full force- the parking lot and almost all the cardio equipment was taken at about 6. I did manage to snag an elliptical type machine and did 4 miles in 30 minutes. Following my good cardio session I did a plyometric leg workout with lots of jump squats and lunges. My bum will be feeling it tomorrow!
Before dinner last night I stopped at the Mall of America to see if I could replace my tall black leather boots, this was a huge hassle! I checked DSW, Nine West, Macy’s, Bloomingdales, and finally Nordstrom. Thank goodness they had one pair of size 8 tall black leather boots and they were on clearance
It was my lucky day!They were originally $300 and I got them for $130 and I had a $100 gift card to use. (see how I rationalize all this). So excited to wear these.

Today’s breakfast is a Strawberry Chobani, a Ginger Snap Larabar and a huge mug of Trader Joe’s Candy Cane Green Tea. My new office is freezing- the thermostat says 59! I have my scarf on and we have heaters going but I can not feel my toes

Last night I met a few ladies from book club for dinner at Salut Bar American in the 50th and France area of Edina. Normally this area is crazy busy but since it was a whopping 1 degree it was DEAD. No one walking the streets or going into the boutiques. Just the crazy people in the restaurant we thought it was good to park 5 blocks away and freeze
I have been to Salut 3 or 4 other times and have always had the same impression, good but overpriced. Last nights dinner gave me the same feeling, I opted for the Tuesday Special: Beef Bourguignone (said in my best Julia Child voice). I love beef bourguignone and Salut’s was good, not great and it was $21.95 which seems pricey for beef stew. Instead of the mashed potatoes I had their amazing fries. And they really are some of the best fries I have ever had!
