After work I headed over to my friend Kim’s house because we had plans to go workout together. Traffic was still a bit slow because of the snow so I gave myself plenty of time to get there, I ended up being 20 minutes early so I ran to the grocery store to pick up a few things for lunches for the rest of the week. Since we haven’t been home much we didn’t have much in the house to eat except fruit/veggies and cereal.
Kim and I chatted for a bit and then headed over the gym around 7, hoping the after work crowd had died down a bit. No such luck, it was packed and it felt like we parked a mile away! A little extra walking is a good thing right
We found 2 ellipticals next to each other and started whirling away. 30 minutes and 3.8 miles later we both had worked up a good sweat! Legs were the plan for the evening and Kim was really excited, she doesn’t have a lot of experience with weights and I was happy to show her. We did:
-Step-Ups
-Deadlifts
-Leg Extension
-Leg Press
-Standing Calf Raises
-Seated Calf Raises
and then finished with some basic abs.
I know I am going to be sore tomorrow so I hope Kim isn’t too sore. During our workout a trainer came up to us to tell me that I couldn’t be “training” clients in the gym. What???? Um, I am not a trainer and we were just to ladies working out together. He was a real jerk about it too. I understand the rule but I am not a trainer nor was I acting like one. If he would came up and just asked nicely I wouldn’t of had a problem with it but he had to be rude about it. Part of me is thinking about calling the manager and complaining. This gym is notorious for having crappy trainers who really don’t know what they are doing and it shows. I see improper form and down right dangerous moves being done with their clients all the time. Yikes!
After our little altercation we finished up our workout and called it a night, it was a solid hour workout and I felt great after. It isn’t very often that I workout in the evening and I remember why. It is 10:15 and I am wired, I may just run a few laps around the house. By the time I got home I was starving and knew just what to make. Amy of Very Culinary had posted a recipe for Cuban Tostadas. So I quickly made a batch and inhaled them in about 2.2 seconds. These are delicious! It made enough filling that I will be able to enjoy leftovers for a few days.
I came home to a nice surprise, beautiful flowers from my Mom for my birthday. I love all the bright colors and amazing smell. They are cheering up the kitchen

My friend Lisa over at Snack-Girl always has delicious ideas for quick, easy and healthy recipes. Her Mini Mini Pizzas are one of my favorites!

Snack-Girl is a place to get some inspiration about healthy snacks. These mini-mini-pizzas are a way to get the flavor of pizza without all the extra calories.
Triscuits are a whole grain cracker and are a fantastic choice for a healthy cracker.
I love these because they are bite-sized. They ARE much crunchier, and so easy to make. These would make a great party snack.
One caveat, they did not taste delicious cold. I would serve these as soon as possible out of the oven. I used my broiler, but Theresa used her microwave. Give it a try!
Mini Mini Pizzas
1 box Triscuits (your favorite flavor)
1 jar pizza sauce
1 package grated low-fat mozzarella cheese
Place Triscuits on a rimmed cookie sheet (lined with either parchment paper or aluminum foil for easy clean-up). Spread on sauce, and sprinkle on cheese. Toast until cheese is melted and serve immediately.
It took me an hour to drive 10 miles, ouch! We got about 9 inches of snow and it was still lightly snowing when I left for work about 7. The roads had been plowed but were really slick and there were a few accidents that I noticed on the way in. I planned ahead and had my new tea cup all prepped and just added hot water before getting in the car for the slow drive, the loose leaf Pineapple Green Tea is very tasty. I don’t really feel like I am getting the pineapple flavor but it was still pretty tasty. By the time I got to my desk my stomach was growling and I grabbed a Strawberry Pomegranate Odwalla Bar and a Blueberry Chobani. A good amount of protein to start what is going to be a crazy crazy day.

Since the weather was so bad last night I am meeting my friend Kim for a workout class this evening and mini birthday celebration, it will be great to catch up and enjoy a good workout. I have 3 more nights of post birthday celebrations with friends to look forward to this week- Wednesday Night is a Happy Hour in Edina, Thursday is dinner with my friend Kristin and Friday night I have dinner with Shari. I love having all of this on the calendar!
