After a crazy day I had a craving for a burger and fries, so that was what we made tonight but just a little bit healthier. We had some Bison Burgers in the freezer from Trader Joes so we quickly thawed those and threw them on the grill pan. Although, we could have grilled tonight it was in the Mid 30’s here! I am not a huge fan of buns so I ate mine with just a slice of cheddar and a bit of ketchup.

Instead of unhealthy french fries, I opted for some chopped raw veggies with a quick White Bean Dip. I mixed together:
Ingredients:
1 Clove Garlic
1 Can of Cannellini Beans
2 Tbsp of Chicken Broth
Olive Oil
Salt/Pepper
Thyme
Dried Cranberries
Directions:
- Blend in a food processer until smooth, stir in thyme and 1/4 cup of dried cranberries.
- Chill in fridge for a bit and serve with pita chips, veggies, or bread.
Tonight’s plans include wine, magazine reading, relaxing and watching the Olympics. A perfect night in my book! The wine we choose was a 2007 Cabernet Sauvignon from The Holdings. A really nice cab with lots of forward fruit.

Mike and Clifford stopped by work today because we had a few showing on the house and they needed to be gone. So Mike came to do some of his work at my work
And even better was that Clifford got to visit too! He just made himself at home, went and visited everyone and then sat in the office chair just like a little employee.

He gets an A for performance today
Do you ever feel like life is flying by? I woke up and I was 29. Last night at dinner Bobby and I were reminiscing about our Freshman year of college and how that was over 10 years ago. He mentioned that he would have never pictured us sitting at The Corner Bar having conversations about life, careers and future children. Instead of talking about where the next party was or Spanish homework we were talking about purchasing art and how we don’t understand how people afford the homes they do.
It seems like yesterday that I was moving to Minneapolis for college, scared and having no clue what I wanted to do with my life. May will mark 7 years since I have finished my Undergrad Degree and 1 year since finishing my MBA. It is nice to be a point in time that I like where my life is, a great partner in Mike, I have a good job, and an awesome group of friends.

It has been a few years since I have looked back at old pictures, so much fun to think about college and the few years right after! Now it is back to present time and all the changes we have coming up, we had another showing last night and one this morning. Hopefully one of them really like the house and wants to buy it (I am trying very hard to be optimistic!). See house selling vibes our way. We need it
