3 1/2 Weeks

Before we know it will be closing time on the new house! We have 3 1/2 weeks until we close and move and so much to do. Moving is stressful! There is a whole house to pack up, a storage unit to empty, blinds and paint colors to pick and figuring out what goes where. We will start slowly packing this week and trying to get as organized as possible to make the move a little less painful. In further attempts to each the pain we hired movers, I hate having to ask people to help and spend their weekend lugging my junk around. My goal is to get everything moved on the 26th and spend the 27th and 28th unpacking. Painting needs to happen at some point in time as well since EVERY room in the house is tan. This is what our living room will soon like like…

Any moving tips? How many times have you moved? I think I am at about 9 but that doesn’t count some of the ones when I was very  little.  Lets hope this is the last one for a LONG time.

Quinoa Raisin Muffins

I was looking for a somewhat healthy muffin recipe to bring to work for our Monday Morning Meeting. I came across these Quinoa Raisin Muffins on Dani Spies and new I had to give them a try. Lets hope everyone at work will eat this!

 
Ingredients

2 cups of cooked quinoa
¼ canola oil
2 cups of white whole wheat flour
½-3/4 cup brown sugar
1 ½ tsp baking powder
1 tsp salt
1/3 cup raisins
¾ cup organic skim milk
1 large egg
1 tsp vanilla

    Makes 12 muffins.

     
    Directions

    Pre-heat oven to 350.

    Combine oil, brown sugar, milk, egg, and vanilla in a large bowl.

    In a separate bowl combine flour, baking powder and salt.  Stir dry mixture into wet mixture and combine well.  

    Stir in quinoa and raisins and divide amongst 12 muffins tins that have been sprayed with cooking spay.

    Cook for 25-30 minutes.
