Since we are trying to cook at home more we were looking for a few more quick and easy recipes. I came across a Ginger-Lime Beef Stir-Fry and knew that would be a winner
We served this with a mixed greens salad with goat cheese, grape tomatoes, goat cheese, cannellini beans and a homemade dressing of olive oil, balsamic vinegar and a bit of Dijon mustard. The beef had nice spice from the red pepper flakes and the udon noodles soaked up the sauce nicely.
Ingredients
- 1 tablespoon sugar
- 1 tablespoon grated peeled fresh ginger
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 1/2 teaspoons low-sodium soy sauce
- 1/4 teaspoon crushed red pepper
- 1 tablespoon canola oil
- 12 ounces boneless sirloin steak, cut into thin strips
- 1/2 cup diagonally cut green onions (optional)
- 4 lime wedges (optional)
- Cellophane or Udon Noodles
Preparation
1. Combine first 5 ingredients in a small bowl; stir well with a whisk.
2. Heat canola oil in a large nonstick skillet over medium-high heat. Add steak; cook 4 minutes or until browned, stirring frequently. Remove from heat; drizzle evenly with ginger-lime mixture. Garnish with onions and lime wedges, if desired.

The Orgain this morning did a pretty good job of keeping me full, but at around 10am I started getting my normal rumblings and opted to have a snack. I cut up a Pink Lady apple and served it with half a packet of Sun Butter and a handful of Goldfish. Hit the spot for my salty and sweet craving!

I have noticed that I do not feel full if I only eat a cold or room temperature item. This morning when I was packing my lunch I went back the pantry and grabbed a can of Amy’s Vegetable Soup so I would have the hot component to my lunch in addition to the sandwich is made. When Summer rolls around I am able to just eat something that is cold or room temperature. It must be the chilly Minnesota air that makes me want hot food!
I threw together a sandwich on a Bagelthin of some roast chicken and ham with a bit of pepper jack cheese and lettuce. I love a good sandwich and I am careful not to pack them too often, I really don’t want to get sick of them. Since I eat so much soup in the winter I am pretty picky about the flavors but Amy’s Vegetable is one of my favorites. Big veggie chunks and a nice broth flavor and they are reasonably priced with a lot shorter ingredient list than a lot of other brands. A Root Beer Zevia and some peapods and cucumbers for crunch. The Dr. Zevia is the flavor that I really want to try! I normally drink Diet Dr. Pepper but am trying to cut out more artificial sweetners. Ideally I would just quit drinking soda all together but I figured one a day won’t kill me

Do you need a hot and cold item at a meal to feel full?
This morning was one of those thatĀ I woke up hungry, my stomach was growling and I couldn’t wait to eat breakfast. Since I usually eat breakfast as soon as I get to work I was thinking about food on my drive in. As soon asĀ I got my computer up and running I dove into an Orgain that I had gotten a sample of at the MN Blogger Meet-Up.

While I don’t love ready made drinks this actually wasn’t too bad, it worked this morning in a pinch and it has 255 calories, 7 grams of fat, 32 grams of carbs and 16 grams of protein. I would consider purchasing this again for after the gym or in a pinch, although I would choose the Chocolate flavor instead of the Sweet Vanilla Bean. It will be interesting to see how long it holds my hunger, usually I am wanting a snack about 10.
