I have the Third Annual Mink Night this evening, where about 20 girls get together for an evening of fun. We will be meeting at Lori’s tonight for appetizers and champagne before getting in a limo for the evening and going from bar to bar. It is such a blast! My friends Heather, Kim and Kristin will be joining the group this year and I can not wait to see how much fun they have.
I wanted to make a unique, healthy and filing salad that would go over well with the ladies. I know grains and a mixture of black beans, chickpeas, and a dressing would be filing and be easy for everyone to help themselves to. This recipe is a mix of a Black Bean, Corn and Quinoa salad with a change in grains and the addition of fruit.
Black Bean, Grain and Mango Salad
Ingredients
- 4 Green Onions, thinly sliced
- 2 Cloves of Garlic, minced
- 1 Can of Chickpeas
- 1 Can of Black Beans rinsed and drained
- 1 Cup of Frozen Mango
- 1 Package of Trader Joe’s Harvest Grains (or quinoa, couscous or another other grain)
- Zest and Juice of One Lime
- 2 Tablespoons of Olive Oil
- Pinch of Red Pepper Flakes
- 1 Tablespoon of Cumin
Directions
- Cook the package of grains and let cool slightly on the stove
- While the grains are cooking, mix together green onions, garlic, chickpeas, black beans, mango, lime juice and zest, olive oil, red pepper flakes and cumin in a large bowl.
- Add the cooked grains and serve warm or store in the fridge until ready to serve. Bring to room temp before serving.
Mike and I tried this salad and it is so good, the lime adds such a nice flavor and this was easy to make. This should be a hit tonight!
