Tonight was spent running errands, we picked out our paint colors and got 4 gallons of paints for the kitchen, eat in area, family room, bedroom and master bath. That will be quite the undertaking! We also ran to Bed, Bath and Beyond to pick up curtains for the master bedroom. Since decorating a house is expensive we are focusing on the rooms where we will be spending the most time.

 

It was almost 7:30 by the time we got home so I picked the faster of two recipes I had picked out for today and tomorrow. Tonight’s choice was Beef Tortellini with Arugula and Sun-Dried Tomatoes.

 

Ingredients

 

  • 1 1/2 pounds frozen beef tortellini (I used half ravioli, half tortellini)
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • Coarse salt and ground pepper
  • 2 bunches arugula (12 ounces total), washed well and torn into large pieces
  • 2 tablespoons butter

 

Directions

 

  • Cook pasta and tomatoes in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Drain pasta mixture, and return to pot.
  • Add arugula and butter to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats tortellini (you may not need all the water). Season with salt and pepper; toss to combine. Serve.

Dessert was a bowl of Thin Mint ice cream. Nothing more to say them seriously delicious. Off to watch last night’s Lost.

Itchy and Green

Somewhere between 5:45 am and 7:45am I broke out in hives and am itching like crazy, I have no clue where it came from! I went to the gym this morning and got a great workout in of 30 minutes on the robot looking elliptical and a good arm workout and by the time I got in my car I was splotchy and itching. Hmmm. I have taken some benadryl and hopefully it subsides soon. Maybe the gym changed their soap or detergent or my body doesn’t like my GREEN sweater to celebrate St. Patrick’s day.

I am  enjoying breakfast at my desk of a Think Thin Chunky Peanut Butter Protein Bar and a Pink Lady apple.  I don’t love this brand of bar but it is quick and easy and 20 grams of protein.

Off to tackle my huge pile of work :) Happy St. Patrick’s Day, I don’t have an ounce of Irish in me but I still love Green. Enjoy parades, corned beef and cabbage and Green Beer if you have having any of those things.
