Last Meal

In what will most likely be the last meal we cook in this house (I am feeling sad about this), I wanted it to be something new and unique. This Everyday Food recipe is definitely that.

 

As we were packing up the wine we realized we had a bottle of wine that didn’t fit in any of the boxes so we had to drink it ;) This lovely Italian White was decent (for a white). An Italian Sauvignon from the Trentino region, Italian whites are some of the few I actually like.

Spinach and Brie Chicken with Tomato Orzo

 

  • Coarse salt and ground pepper
  • 8 thin chicken cutlets (1 1/2 pounds total)
  • 2 tablespoons Dijon mustard
  • 1 package (10 ounces) frozen leaf spinach, thawed and squeezed dry
  • 4 ounces Brie cheese, cut into 8 slices
  • 1 cup orzo
  • 2 plum tomatoes, cored and chopped
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice

Directions

  1. Set a large saucepan of salted water to boil. Heat broiler, with rack set 4 inches from heat. Place chicken on a large rimmed baking sheet lined with aluminum foil. Dividing evenly, spread one side of each cutlet with mustard; top with spinach, then cheese. Season with salt and pepper. Starting at short end, roll chicken up tightly, and arrange, seam side down, on sheet.
  2. Season rolled chicken with salt and pepper. Broil, without turning, until tops are lightly browned and chicken is cooked through, 8 to 10 minutes.
  3. Meanwhile, cook orzo in boiling water until al dente. Drain well; return to pot. Add tomatoes, parsley, butter, and lemon juice. Season with salt and pepper, and toss to combine. Serve stuffed chicken with orzo.

Lunch Break

Today has been just as busy as yesterday, I went to a 9am Yoga Sculpt class at Corepower and then made a Trader Joe’s run so we have some easy foods to quickly make this week since we will not be cooking much! I got home around 11 and did a bunch more packing, all of the miscellaneous drawers are done, the kitchen is about 90% complete and most of the wine is packed as well.  feels like I am living with a bunch of boxes and tape. We can not wait for Thursday to get here so we can get moved in and organized.  

 

We did sit down for lunch around Noon, I threw together ravioli and tortellini with some Fire Roasted Garlic Tomato Sauce and a huge plate of veggies from Trader Joe’s- heirloom tomatoes, peapods, peppers and cucumbers with Chipotle Hummus. Just what I was craving.

After lunch we did more packing and cleaning, I finally showered and made a target run. I have a batch of granola cooking in the oven and I finally sat down for the first time since 8:15 this morning. I am going to relax on the couch with a magazine and may even sneak a nap.

Rate The Wine

Last night our friends Cathy and Mike had a Cabernet Sauvignon event where everyone brought a bottle in the $15-$20 range. Everyone started with one wine where we rated on a 5-3-1 scoring system for color, aroma, body, taste and finish. Each wine was totaled and everyone had their favorites.

 

We had a good selection of wines to choose from

Both Mike and I had the Big Ass Cab as our favorite, it was fruity and not overly tannic. Everyone had a different wine as their top pick. I love that everyone has such unique taste :) As always there was a good food selection

Off to Yoga and then packing fun, we are moving in less than 5 days. Eeek!

Busy Busy Busy

Yesterday absolutely flew by, it was a non-stop day. We did lots of errand running and purchasing of items for the new house. After starting the day with a good cardio and leg workout we showered quickly and headed to Home Depot and ended upending about 2 hours there ordering custom blinds for 3 rooms. We looked through lots of color choices and ended up with something relatively neutral and choose the same for the dining room, kitchen, and great room.

After blind ordering we headed to Best Buy and Ultimate Electronic to price flat screen tv mounts and in-ceiling speakers. They ended up being a lot more expensive than we thought they we going to be but we ended up going with 4 speakers and the tv mount and we will be having it professionally installed! Neither of us have any clue about the ins and outs of speakers. Then it was on to find curtains for the office and guest bedroom. By 4pm we hadn’t sat down at all and were in need of some relaxing.

 

Our relaxing was short, we were meeting our friends Scott and Jill at Enjoy for some appetizers before heading to a wine event. The edamame was delicious, it had a cinnamon and nutmeg hint.

We had a Mozzarella Roll that was meant to be like sushi. It was an outside sheet of mozzarella with prosciutto, basil and a balsamic reduction. This was amazing and I need to figure out a way to recreate it.
