We said goodbye to old house this evening with a scrub down, we vacuumed, washed floors, wiped down every single surface. The new buyers are getting a VERY clean house! Now if only every place I had ever lived in had been that clean, I talked to my Mom earlier this evening and we reminisced about some of the disgusting places I lived in college. Ick! I do think it is a right of passage to live in at least one crappy place that is run down, tiny and has 1 bathroom for 4 girls ;)

 

After cleaning we headed to the new house to make a quick dinner and do some relaxing. The recipe for this evening on the Google Calendar was from Everyday Food (I am a huge Martha Stewart fan and have never made a recipe that did not turn out). Steak was on sale this week at Super Target but grapes were not- almost $6 dollars for 2 pounds of grapes. Ouch. I don’t buy grapes unless they are 99 cents a pound but $2.99 is just ridiculous.

 

While prepping dinner I enjoyed some Pom Wondeful with a bit of plain sparkling water, I also packed my food for tomorrow and threw together a Green Monster to drink on the way to the gym.

Ingredients

 

  • 1/4 cup slivered almonds
  • 2 New York strip steaks (about 12 ounces each), halved crosswise
  • 2 bunches flat-leaf spinach (about 3/4 pound total), stems removed, washed well
  • 1 cup red seedless grapes, halved
  • 1 tablespoon balsamic vinegar

 

Directions

  1. Preheat oven to 350 degrees. Spread almonds on a rimmed baking sheet. Toast in oven, tossing occasionally, until golden, 5 to 8 minutes. Transfer to a small bowl; set aside.
  2. Heat a large skillet over medium-high. Season steaks with salt and pepper; cook in skillet, turning once, until medium-rare, 3 to 5 minutes per side. Transfer to a plate, and tent loosely with aluminum foil (reserve skillet).
  3. Place spinach and grapes in skillet; toss with pan juices until spinach is slightly wilted, 1 to 2 minutes. Stir in vinegar and toasted almonds. Serve steak with spinach.

For dessert I whipped up some of Gena’s Banana Soft Serve. Clifford was drooling the whole time I was making this (he loves bananas) so I let him lick the spatula and food processor bowl ;)

New Routines

March 29, 2010

After 8 glorious hours of sleep last night  I am feeling much better, it felt so good to collapse crawl into bed last night.  I read a few chapters of Outlander and was sound asleep by 10!

This morning was all about finding my new routine, where did I put everything in the bathroom drawers, where do I lay things out so I will remember them in the morning, which route do I take to work? I have the start of a good routine but definitely need to take a different route to work, I got caught up in high school drop off and parking traffic. That was a bit of a wait but it was still 19 minutes from garage to office door, pretty darn good. With a different route that could be 16 to 17 minutes :)

I managed to remember my food for the day and started off with Good Earth Sweet and Spicy tea, a chocolate chip Cliff bar, 1 small clementine and a Strawberry Fiber One Yogurt (I had coupons for 2 free packs of this and am not sure I would buy it again)

Off to dig out of my email and cross a few things off my work to-do list.
