Minty Lunch

I looked down about 1:30 and realized I hadn’t even eaten lunch yet and I was really hungry. We are short at work this week so we have all been running around like crazy. At least my days go fast here (unlike my last job!). I grabbed my salad I had made on Monday night and the Ham and Arugula Wrap.

I added a lot more to this salad than I normally do, we had 3 types of lettuce, spinach, many herbs and arugula in the fridge so this salad was full of flavor. I added a huge bunch of veggies and mint. The mint in the salad was so good, I loved the flavor. If we have it around the house for recipes in the future I will be adding it to my salads. The wrap was also really good when it had sat for a day, the goat cheese “soaked” into the ham and was so good, I think goat cheese might be my favorite sandwich spread.

This evening I have a happy hour with a few girlfriends and am looking forward to catching up with them.

World Health Day

The World Health Organization has declared today World Health Day!

With the campaign 1000 cities, 1000 lives, events will be organized worldwide during the week of 7 – 11 April 2010.

The global goals of the campaign are:

  • 1000 cities: to open up public spaces to health, whether it be activities in parks, town hall meetings, clean-up campaigns, or closing off portions of streets to motorized vehicles.
  • 1000 lives: to collect 1000 stories of urban health champions who have taken action and had a significant impact on health in their cities.

WHO has even put together a social media site encouraging participation, check it out and see what your city has going on.

To help support World Health Day I am going for a walk over lunch to get outside and get moving and enjoy a beautiful day. Since I have the gym planned for tomorrow morning I wanted to do something quick that I could do during my work day.
