Balsamic Strawberries with Angel Food Cake

To pair with the Barbara wine last night I wanted a unique dessert that was light, sweet and would use up the HUGE container of strawberries we had in the fridge. This was quick and easy to put together and went over very well at the Mystery Wine Event. I didn’t have enough time to make a homemade angel food or pound cake so we used store bought ones, Target had great options for both.

 

The strawberries were so sweet and the vinegar soaks into the cake and makes it nice and moist. This is a go to easy summer dessert! The key is using good balsamic and very fresh strawberries.

Ingredients

  • 1 1/4 cups sugar
  • 1 1/4 cups balsamic vinegar
  • 2 1/2 tablespoons honey
  • 2 teaspoons freshly ground black pepper
  • 1 cup fresh basil leaves, torn into small pieces and loosely packed
  • 10 cups strawberries, trimmed and halved (4 pounds whole berries)

 

Directions

 

In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.

That looks really good! I was hoping you’d post the recipe for it when I read about it on your mystery wine post. I’m going to have to try it once we’re bombarded with local strawberries when our CSA starts. I’m sure I’ll be looking for any way to use them at that point!
