Galaxie Dinner

Mike had spent most of the day running errand since he is off this week before he starts his new job so he had decided happy hour and dinner out were in order. I was not going to insist otherwise ;) I met him for some sun on the patio and enjoyed the gorgeous weather and talked about plans for the next few months.

 

We opted to try a new diner that had opened up near the old house and were even more exited when we saw that they served breakfast all day! Mike ordered the Tex Mex which was a burrito with eggs,  cheese and hashbrowns that was seriously almost the size of Clifford.

I ordered two eggs overeasy with two pieces of bacon and 2 huge fluffy pancakes. Everything was delicious and I only managed to eat the eggs, bacon and 3/4 of one of the pancakes. I do think that I could eat breakfast food for every meal. We will be visiting the Galaxie Dinner again.

Impromptu BBQ

I was at a friend Silpada party on Sunday afternoon and thought, we should have some friend over for a bbq. So with an hour and a half’s notice I through together a bbq dinner for 6! I made a few appetizers of cheese, sausage and prosciutto wrapped around dates, chips and salsa and some pistachios and cheese straw crackers.

For our main course we had salad with cucumbers, peapods, a yellow pepper and feta cheese, I also made my go to salad of quinoa, black beans, corn, orange pepper with a dressing of olive oil, lime juice, cumin and red pepper flakes. This salad is a quick and easy throw together salad and I always have the ingredients on hand to make it. It is also gluten free, our friend Julie who was coming over has celiac.

We grilled some grass feed beef and hot dogs from the half of pig we bought earlier this year. This is the first time we grilled since last fall! I have missed it :)
