I needed a super quick dinner for this evening since I was meeting with a landscape designer at 5 (he ended up cancelling at the last minute, grr!), and Mike was getting a ride home from a friend and he needed to get his tire fixed before 8 and I had a haircut at 7:45. This evening is jam packed! I needed something that I could make and serve within 20 minutes and this recipe delivered.

 

Ingredients

 

Directions

Boil water for pasta, meanwhile chop sausages, onion, bell pepper

Cook Pasta for 9 minutes and drain

Heat Olive Oil over medium high heat, add sausages and cook until browned on both sides about 5 minutes, add onion and red pepper and cook for another 3-4 minutes. Add 2 Large handfuls of spinach and 1 Jar of Arrabbiata pasta sauce and cook until sauce is hot and spinach is wilted

Top pasta with sauce and enjoy

This turned out so well for just throwing a bunch of ingredients together! The sausage was nice and spicy and really played up the Arrabbiata sauce. I topped with just a sprinkling of cheese and quickly ate. We always have similar ingredients on hand or we could substitute zucchini and turkey or eggplant and ground beef. The recipes that you throw together on the fly are often the ones that turn out the best.

Flat Tire

Our morning got off to a rocky start, Mike was getting ready to leave and noticed that his back tired was flat. He didn’t have time to put the spare on and take it to get fixed this morning so we car pooled and will need to figure out how he will get his tired fixed tonight. The second challenge will be picking him up this evening, I have to be home by 5 to meet with a landscape designer and he will be at work until at least 6. I may have to drive home, meet with the designer and then drive back to get him before my 7:45 haircut. Crazy day!

By the time I got to my desk I was starving, I pulled out my dry Kix, an apple and a Kind Plus Bar in Almond and Cashew and quickly ate my breakfast. Feeling much less crabby now :) The Kind Plus bars have added Omega-3 in them, a nice way to get some  extra Omega-3.

Off to spend the day on the Mac doing some website design and brochure making!
