I had been thinking about a big bowl of pasta for some reason and spaghetti and meatballs came to mind. My idea of comfort food :) Almost all of the ingredients are things we keep on hand.

 

Ingredients

1 lb Spaghetti

1.5 pounds Hot Italian Turkey Sausage

1 Small Onion

2 28oz cans Whole Tomatoes

Pinch of Red Pepper Flakes

Olive Oil

Salt/Pepper

 

Directions

 

Salt and boil water for spaghetti. Add spaghetti and cook about 7 minutes, drain.

 

Remove sausage from casings and create 20-30 small meatballs, add to a dutch oven that was coated with olive oil. Cook meatballs until browned on all sides, about 5 minutes. Remove meatballs and set aside. Add onion and cook until softened, about 5 minutes.

 

Add cans of tomato, red pepper flakes and cook 5 minutes while breaking down whole tomatoes, add meatballs back in for 7 minutes until sauce thickens slightly. Serve sauce and meatballs over noodles.

Sam’s Club had a great variety of fruit this week and I picked up blackberries, strawberries, pears, apples, and kiwi. I chopped up enough fruit to make a quick fruit salad. I topped each salad with scoops of So Delicious Soy Ice Cream, not the same as real ice cream but it was still pretty tasty. Fruit and ice cream is my idea of a perfect dessert.

Off to relax a bit, watch the Twins and hopefully get a good night of sleep.

This week I am working on planning more meals and figuring out our new routine. What does we go to the gym, who does what for dinner and how everything else gets done during the week. I prepped 2 Green Monsters last night that we could each drink after the gym,

1 frozen banana

Pom Juice

Almond Milk

2 Scoops Chocolate Protein Powder

1 Scoop Amazing Grass

3 handfuls of Spinach

 

 

Better than spending at least $4 dollars at the gym!

Monday: Spinach and Meatball Calzones

Tuesday: 30 Minutes Spaghetti and Meatballs

Wednesday: Spring Vegetable Couscous and Chicken

Thursday: White Bean and Tuna Salad

 

Do you plan meals out in advance and shop for the upcoming week? I am trying to be more organized regarding meal planning and shopping. When Mike was travelling it was just me for dinner and I would throw something quick together and now that we can actually have dinner together. It will help cut down on grocery trips and the amount we spend at the store. Hopefully I can keep up with the plan.
