Tuna n’ Cheese

Clifford and I had plans to meet my friend Shari and her dog Abby at the dog park this evening for a nice long walk. We did 5 loops around the park and we caught up while Clifford and Abby sniffed every possible leaf, tree and stone ;) Clifford should sleep like a baby tonight and hopefully I do the same.

 

The meal plan for the week had a Tuna and Bean Salad and I knew I would want a bit more with it. A bow of Annie’s Bunnies and Cheese came in handy.

 

Tuna and Bean Salad

 

Ingredients

 

2 cans of cannelini beans, rinsed and drained

2  cans of tuna, drained

1/4 cup of olives

1/2 of a small red onion

2 tbsp Olive Oil

1 tbsp Red Wine Vinegar

2 garlic cloves

Baby Spinach

Salt/Pepper

 

Directions

 

Combine beans, garlic and oil in a small pan and heat for 4 minutes

 

Mix tuna, olives, onion, and red wine vinegar. Add bean mixture once warm and top the spinach leaves.

 

 

This is a great quick and easy weeknight salad and would make a good appetizer as well. You could add to a toasted baguette or top crackers with a few spoonfuls. A bowl of mac and cheese is always a good thing :) The bunnies added a nice touch!

We had some rain this evening and I just caught a glimpse of a rainbow! So pretty. They are supposed to be good luck right? ;) Maybe I will make a wish just in case.

I Eat

I had my food for the  day in containers all ready to go and I realized I needed a rather large lunch bag to get everything in there. My lunch bag is huge, as big as my hobo style yellow purse.  I am sure people at work think it is odd how much food I eat. The contents of my lunch bag today included:

Cereal

Cut Up Fruit

Cucumbers

Peppers

Tea

A SoBe drink

Leftover Pasta

Larabar

Pretzels

Cliff Twisted Fruit

Granted that is breakfast, two snacks and lunch but it goes to show how much I eat in any given day.  I am also trying to use more containers instead of the million baggies I go through. Washing containers is much better than throwing that baggy away. Breakfast today is a mixture of blackberries, strawberries, apples, pears and kiwi with a Strawberry Cultured Coconut Milk and a handful of Kashi Cinnamon Harvest cereal all mixed together. The tea flavor today is Tazo Berryblossom White.

Off to work on a website :)
