Clifford and I had plans to meet my friend Shari and her dog Abby at the dog park this evening for a nice long walk. We did 5 loops around the park and we caught up while Clifford and Abby sniffed every possible leaf, tree and stone
Clifford should sleep like a baby tonight and hopefully I do the same.
The meal plan for the week had a Tuna and Bean Salad and I knew I would want a bit more with it. A bow of Annie’s Bunnies and Cheese came in handy.
Tuna and Bean Salad
Ingredients
2 cans of cannelini beans, rinsed and drained
2 cans of tuna, drained
1/4 cup of olives
1/2 of a small red onion
2 tbsp Olive Oil
1 tbsp Red Wine Vinegar
2 garlic cloves
Baby Spinach
Salt/Pepper
Directions
Combine beans, garlic and oil in a small pan and heat for 4 minutes
Mix tuna, olives, onion, and red wine vinegar. Add bean mixture once warm and top the spinach leaves.
This is a great quick and easy weeknight salad and would make a good appetizer as well. You could add to a toasted baguette or top crackers with a few spoonfuls. A bowl of mac and cheese is always a good thing
The bunnies added a nice touch!
We had some rain this evening and I just caught a glimpse of a rainbow! So pretty. They are supposed to be good luck right?
Maybe I will make a wish just in case.

Mmm…this looks delicious! I love mixing white beans with various ingredients because they’re both subtle and buttery in flavor at the same time. Yummy!
