Tonight we made a great family style dinner, Mike’s dad came over and we made Chili Rubbed Steak Tacos, leftover bean salad and served Jessica’s Chocolate Chewies for dessert.
For an appetizer we munched on some tomato, garlic and basil bread from the French bakery with olive oil and some dipping seasonings. Such a great appetizer to enjoy while catching up on the past few weeks.

It has been awhile since I had made a taco style dinner, I found a recipe for a Chili Rubbed Flat-Iron Steak recipe in the May issue of Cooking Light.
Ingredients
- 2 tablespoons brown sugar
- 2 teaspoons canola oil
- 1 teaspoon chipotle chile powder
- 1 teaspoon ground cumin
- 3/4 teaspoon kosher salt
- 1 (1-pound) flat-iron steak, trimmed (I used a thin top sirloin steak)
- Cooking spray
- 4 lime wedges
- 4 (6-inch) corn tortillas, warmed
- Cilantro leaves (optional)
Directions
1. Preheat grill to medium-high heat.
2. Combine first 5 ingredients in a small bowl. Rub sugar mixture evenly over steak; let stand 10 minutes. Place steak on a grill rack coated with cooking spray; cook 4 minutes on each side or until desired degree of doneness. Let stand 10 minutes; cut diagonally across grain into thin slices. Serve with lime wedges and tortillas. Garnish each serving with cilantro leaves, if desired.
The steak had tons of flavor and a nice kick from the chipotle chili powder, we ended up using flour tortillas instead of the corn ones since they got a bit charred on the grill and a bit too crispy. For topping I cut up some mini peppers, romaine lettuce, tomatoes, some Pace salsa in Medium and a bit of shredded cheese. A little leftover bean salad from last night was a nice starter too.

For a nice end to our Sunday evening we each enjoyed a glass of Fritz 2006 Cabernet Sauvignon from the Dry Creek Valley. I enjoyed this cab more than the one last night, it seemed to have more forward berry flavor. This wine was part of our Wall Street Journal Wine Club Cabernet case that we purchased a few months ago for $139.99, a pretty good deal considering the bottle averages about $30 and we have one more of these left.
