Granola

Since this week is supposed to be in the uppers 80 and even maybe the low 90’s I figured it would be a good ideal to make another batch of granola to enjoy with some Greek yogurt. Oatmeal would be a bit too warm for such warm and humid temperatures.

 

I came across this version of granola in Bon Appétit and figured it would be a nice change from other versions I have made in the past. The addition of the ground ginger is a nice flavor addition and adds just a hint of spice.

 
Ingredients
  • 3 cups old-fashioned oats
  • 1 cup coarsely chopped pecans
  • 1/2 cup unsweetened shredded coconut
  • 3 tablespoons (packed) brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon (generous) salt
  • 1/3 cup honey
  • 2 tablespoons vegetable oil
  • 1 cup assorted dried fruit (I used dried pineapple and mixed berries)
 
Directions
  • Preheat oven to 300°F. Line rimmed baking sheet with parchment. Mix first 7 ingredients in large bowl. Stir honey and oil in saucepan over medium-low heat until smooth. Pour honey mixture over oat mixture; toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Place sheet on rack. Stir granola; cool. Mix in fruit.

Your new design looks great.
I’m going to try this granola recipe today. My MIL made some homemade granola when we were in OH a couple of weeks ago. we loved it, but it had 1/2 cup butter!! This one looks fabulous.

Love the new look! The granola looks fabulous…granola is dangerous in my home but I just may have to make this one! :)
