Tofu and Cords

I knew I wanted something light, healthy and fresh for dinner and when I read Mama Pea’s post this morning for Honey Lime Tofu with Strawberry Peach Salsa and I figured why not. I don’t eat much tofu and Mike certainly doesn’t love it, but… since it was just me for dinner I was in. You can see the original recipe here but these are my modifications to the fruit salsa, instead of red onion I used a shallot from the farmers market and I added basil too.

 

On the side my two first ears of corn for the summer, it was ok. Not great, not bad but certainly enjoyable. And for ten cents each it was a darn cheap side!! I am counting down the days until we can enjoy some Minnesota corn.

Where do the cords come in, well after working a bit later than usual I came home to find my ipod and camera cords completely chewed up by Clifford. I left my bag unzipped and he ate both of them. There were little shreds of wire and plastic all over the family room. Clifford’s fascination with eating cords seriously confuses me, he doesn’t shoes or socks but loves zippers and cords. Who knew? He also managed to dismember a toy, this was his favorite for a few weeks but there must have been a moment today where he decided it was time for the red fluffy thing to go.

We are pretty low on food and I am waiting to pick up food until Thursday since it is just me for the week. My options for breakfast were a little limited, I wanted hard boiled eggs but we were out so I decided on a peanut butter and jelly sandwich and the least of the strawberries. A little Butter Toffee Peanut Butter and some Ligonberry Jam on Trader Joe’s Hearty Grain bread. A great combo and an even better way to start a Wednesday.

An interesting article about how biking could help women maintain their weight, I read this and thought- I think we all knew this already!

Exercise: Bicycling to Keep Off Extra Pounds

Bicycling for exercise may help women control their weight during their 30s and 40s, a new study says.

Brisk walking has the same effect for slim, overweight and obese women, researchers found, but slow walking does not.

The findings are based on the second Harvard Nurses’ Health Study, which is tracking 116,608 female nurses who periodically fill out questionnaires about their health, weight, diet and behavior. The new analysis, published in the June 28 issue of Archives of Internal Medicine, looked at weight change and behavior from 1989 (when the nurses were 25 to 42 years old) to 2005; to isolate the effects of exercise, the researchers controlled for other obesity risk factors.

They found that women who increased physical activities like brisk walking and bicycling by 30 minutes a day during the 16-year period maintained their weight and even lost a few pounds, but those whose exercise was slow walking did not lose any weight.

Women who decreased their bicycling time from more than 15 minutes a day to less than 15 minutes gained about four-and-a-half pounds on average.

“This is not suggesting that if you bicycle for five minutes you will immediately go back to the weight you were when you were 18,” said Anne C. Lusk, a research fellow at the Harvard School of Public Health who was an author of the paper. “If that were true, bicycle sales would go through the roof.

“But it’s highly suggestive that bicycling is highly beneficial in women.”

Sometimes I wonder why we spend so much academic time and resources on studies that we already know the answer to! Oh well. At least they are trying to help people become more active.

Peachy Keen

Since I am on my own this week for dinners I didn’t want to spend too much time cooking. So tonight I opted for some breakfast for dinner. A big ol’ bowl of oats topped with half a very ripe peach, almond butter, and a ton of cinnamon. It has been a few weeks since I have taken the time to make oats and tonight it was really worth it.

Dinner was still on the table in about 15 minutes :) I am off to watch I Hate Valentines Day that I taped a few days ago. I am a sucker for anything with John Corbett (Aidan on Sex In The City) and Nia Vardalos (My Big Fat Greek Wedding). Hopefully it is worth watching.

Quiet

Since Mike is out of town this week for work it has been very strange to come home to silence. Clifford and I were both sleepy this morning and really wanted to stay curled up in a warm bed and after I ran him outside he decided that he wanted to go back to bed. Very jealous of a dogs life today ;) We went for a short walk this morning and played a little fetch before I headed into work.

For the first time ever, I didn’t listen to anything on the way to work. All of the local morning shows were talking about topics that had no interest to me so I turned the radio off. I drove to work in silence! Sitting in quiet is something I never do, I like to be busy and surround myself with activities and sounds. But today I enjoyed the quiet, I checked out all the green trees and noticed how pretty the Minnesota River looked as I drove over it. I don’t think this is something I will do everyday but I came to work much calmer and ready to start a crazy busy day.

Breakfast was a small container of granola, minus the yogurt that I forgot sitting on the kitchen island :( I hate wasting an unopened container of food but it won’t be too good after sitting out all day. At least the granola was good :)

What do you listen to in the morning? I listen to a Woman’s Talk Radio station but also flip back and forth between a few others. The one thing I do not listen to in the morning is music. Too much for me that early!
