I needed a good dish to share for the wine event this evening, something that would please lots of different palates. I turned to Cooking Light and found a grain and vegetable salad that I could make some modifications to.
Dressing
1/3 cup water
1/4 cup good balsamic
2 tbsp olive oil
1 envelope Italian dressing seasoning
Salad
1 Package Israeli Couscous
2 Cups of Water
2 cups Cherry or Grape Tomatoes
2 oz Feta
1/2 cup of finely chopped green onions
1/4 cup of chopped pitted kalamata olives
1/4 cup chopped Italian Parsley
Directions
Combine dressing ingredients and whisk together
Bring water to boil and add Israeli Couscous, cook for about 8 minutes and fluff with fork
Combine couscous, tomatoes, feta, green onions, olives and parsley in large bowl, toss with dressing
Hopefully it goes over well tonight with the salty flavor of feta, a nice light grain and lots of freshness from the veggies.
We woke up to sounds of thunder around 3:30 am, it was LOUD! The rain was coming down hard and it had gotten a bit chilly. Thankfully we remembered to close the windows before we went to bed since rain was in the forecast for overnight, all day today and maybe tomorrow. Hello Mother Nature, don’t you know that it is supposed to be nice on the weekends and not rain?
I got ready for work and took my time this morning since I knew traffic would be slow. I cleaned a bathroom, picked up a bit around the house and played with Clifford for a few minutes. I finally left about 7:30 and my drive was about 25 minutes. Not horrible but slower than usual. Surprisingly I was still one of the first ones in, everyone was sitting in traffic. Breakfast was a Chocolate Brownie Cliff Bar, a banana and cup of Peppermint Tea. Should hold me over for a few hours during all the meetings we have this morning.
A coworker sent this video out yesterday and I had to share, such positive affirmations and it is impossible not to smile. Enjoy!

GoodbyeTwincities, Hello Florence!
We are just putting together our carry on bags and then are headed to the airport. I have a few snacks packed and an empty Camelback bottle to fill at the airport and then we are bound for Florence (via Paris). We are sitting in First Class, thank you miles So I am not worried about the dress, it is in a garment bag and will be hung in the first class cabin.
The food should be somewhat decent and served pretty early so hopefully we can get some sleep. We have a few hour layover in Paris and then head to Florence. We arrive around 2pm on Friday and can head to the hotel for a shower and then out to see some sights.
I am so excited for this trip and will post pictures as often as I can!
