I needed a good dish to share for the wine event this evening, something that would please lots of different palates. I turned to Cooking Light and found a grain and vegetable salad that I could make some modifications to.
Dressing
1/3 cup water
1/4 cup good balsamic
2 tbsp olive oil
1 envelope Italian dressing seasoning
Salad
1 Package Israeli Couscous
2 Cups of Water
2 cups Cherry or Grape Tomatoes
2 oz Feta
1/2 cup of finely chopped green onions
1/4 cup of chopped pitted kalamata olives
1/4 cup chopped Italian Parsley
Directions
- Combine dressing ingredients and whisk together
- Bring water to boil and add Israeli Couscous, cook for about 8 minutes and fluff with fork
- Combine couscous, tomatoes, feta, green onions, olives and parsley in large bowl, toss with dressing

Hopefully it goes over well tonight with the salty flavor of feta, a nice light grain and lots of freshness from the veggies.

Looks and sounds yummy! To make it gluten free, you could sub quinoa for the couscous. I’ll be making this one!
