Paging through magazines this afternoon I kept seeing salmon and knew that we needed some fish tonight. Since we are trying to eat fish every week and I am trying to teach myself to like salmon more.
Ingredients
6oz of salmon
1 Bunch Asparagus
6 oz Arugula
1 Cup of Blackberries
1/4 cup of Orange Juice
2 tsp of honey
4 tsp of soy sauce
2 tsp of dark sesame oil
Salt
Pepper
Olive Oil
Directions
- Preheat oven to 400, place salmon on cookie sheet sprayed with a bit of cooking spray. Bake for 18 minutes or until cooked through
- Place asparagus on a second cookie sheet and coat with a bit of olive oil, salt and pepper and bake for 10 to 12 minutes or until ends are crisp.
- Add blackberries to a small bowl and mash with a fork until mostly juice and the berries are chunky. Add honey, soy suace, dark sesame oil, orange juice and combine to make a dressing. Top arugula with a few extra blackberries and any other salad toppings and dressing.
- Top salmon with dressing and serve with salad and asparagus
The sweetness the blackberries add to the salmon is refreshing and the sesame oil and soy sauce give it an Asian feel. Mike loved the flavor of the salmon and I enjoyed it and will keep trying to love salmon.
