Perfect Summer Dinner

Today was one of those perfect summer days, not too hot or humid. It was 80, sunny and a bright blue sky. To bad I was inside all day! I had a few work errands to run and hightailed it to a Yoga Sculpt class where I think I sweat enough for 3 people. That class always kicks my butt.

 

I headed home to shower and make an easy, no cook dinner. I threw together a few sandwiches on everything bagels with ham, cheese, hummus and spinach. On the side we had broccoli and hummus and a big fruit plate of fresh watermelon, grapes and cherries. I LOVE summer food!

I don’t know what your book shelf, magazine rack, coffee table and nightstand looks like but mine usually have AT LEAST one cookbook and/or cooking magazine on it. Every time I get a new cookbook I have to at least page through the whole thing and figure out what I want to make from it. I mark pages with those darn magazine subscription cards that seem to fall out all over the place. But they do make good book marks :) I really have no clue how many cookbooks I have- 20 or maybe even 30?? I just know I LOVE cookbooks and love making new recipes. Especially since I rarely make the same thing twice.

Routine Interrupter

I am such a creature of habit; I go to bed about the same time every night, we have two alarm times (one for the gym and one for non gym days), I lay out my clothes the night before and get ready in about 25 minutes. Even Clifford is used to this routine, he knows Dad lets him out in the morning right away and I take him for a walk right before I leave. This morning the routine was off a bit because of Kimchi staying with us and Clifford didn’t want Kimchi getting any extra attention so instead of going back to bed while we were getting ready he sat in the bathroom with us because that is what Kimchi was doing. Clifford had to be first out the door on our walk and had to run around a few extra times before I left. It was pretty funny to see him acting so jealous!

 

To be funny, Mike likes to interrupt my routine because he loves getting a rise out of me. He loves seeing me try to get right back to what I was going to do next. We have an inside joke of him coming up to me and saying Routine Interrupter, Routine Interrupter. He then laughs at my instant need to finish what I was doing.

 

Keeping with my normal routine I had breakfast at my desk right when I got in, a Pineapple Chobani and a big bowl of watermelon. Perfect items for a summer day.
