Quinoa Party Salad

Whenever I need to make a dish to bring to a potluck, BBQ or party I make my Quinoa Party Salad. It is unique, super healthy and has great flavors and is even vegan friendly!

 

Quinoa being one of those great superfoods makes a great salad base with a great protein and carbohydrate ratio. Adding in black beans, corn, and peppers give it a nice pop of flavor while the dressing in jalapeno gives it some spice.

 

Quinoa Party Salad

 

Ingredients

 

2 cups cooked quinoa, cooled

2 pepper, 1 red and 1 orange

2 cans black beans

2 can corn (or fresh)

1 cup of cilantro

1/4 cup olive oil

Juice of 1 Lime

1 tbsp cumin

Pinch of Red Pepper Flakes

Salt/Pepper

 

Directions

 

Cook quinoa in 4 cups of boiling water, covered, for about 20 minutes. Let cool.

 

Chop pepper, cilantro, jalapeño and add to corn and beans

 

Whisk olive oil, lime juice, salt/pepper. cumin and red pepper flakes.

 

Add quinoa to bean and veggie mixture and top with dressing and salt/pepper. Serve at room temperature or cold.

I love taking healthy salads that have unique ingredients and what is even better is that even picky eaters (i.e. most of Mike’s family) will eat this salad! I really hope that everyone at Bill’s party enjoys this salad as much as I do :) It is my signature dish!

Yum! Looks a lot like my black bean salad!! I just don’t add the quinoa…I’ll do that next time :-)

Hello colorful! Looks fantastic.

I’ve been thinking about that corn & beat cilantro salad from last weekend…I want to find a way to recreate it without the yogurt. Any ideas?

Oh and I’m probably doing the early C2 Class tomorrow in STP if you want to join me… :)

That looks great! I normally make desserts for group get togethers bec I have been dubbed the dessert girl, but I will have to make this for something.
