If visiting Chicago and you are into food, a stop at a Rick Bayless restaurant is a must. We decided that the new torta and soup shop, Xoco, would be our stop on this trip. There was a 30 minute wait just for lunch! Since the wait was so long we had a very good opportunity to make sure we knew exactly what we wanted.
Xoco has Gold Leed Certification and sources most of its food from family farms near Chicago. Everything from the decorations to the food was planned around this certification. It is a great space for such a small restaurant!
I ordered a hibiscus and jamaica iced tea, a sparkling water, the requirement of homemade chips and guac, a side salad that had cucumbers, jicama and a lime cilantro vinaigrette but the absolute star was my torta. A mixture of mushrooms and garlic spread on nice crusty bread with black beans, goat cheese and arugula with a bit of salsa on the side. This sandwich was seriously amazing, so good that I am going to try to replicate the flavors at home.

Mike had the soup of the day which was a corn and pepper soup, he also had a torta with chorizo, poblano peppers, jack cheese and a tomatillo salsa. The food was worth the long wait!
