With the amount of entertaining that we do, I am always looking for a quick and easy dish that packs lots of flavor and that can be vegan/vegetarian friendly. Enter in a big can of chickpeas and a mixture of spices that we always have on hand; curry powder, cumin, cayenne and a pinch of cinnamon.
Ingredients
1 29oz can of chickpeas
2-3 teaspoons of curry powder, hot or sweet
1 teaspoon cumin
Pinch of Cinnamon
Pinch of Cayenne
Salt/Pepper to taste
Directions
Place drained and rinsed chickpeas in a dry skillet. Add spices and stir to cover.
Toast chickpeas for 8-12 minutes, stirring every few minutes to ensure they toast evenly.
Let cool and serve. These will keep for a day or two in a sealed container.

These are a bit crunchy with great flavor from the curry powder, so tasty and can be done in less than 15 minutes.
