For the Wines of Chile Tasting and Book Club events this week I made one of my all time favorite dips, red onion dip. Now I am not normally a big onion fan but this dip with veggies is so good! It remind me of eating chips and french onion dip as a kit with my parents.
Ingredients
3 tbsp vegetable oil
1 large chopped red onion
2 cloves of garlic, chopped
1/2 tbsp chopped fresh ginger
1 tbsp thyme
1/8 tsp allspice
1 tbsp brown sugar
1 cup light sour cream
Directions
Heat oil in a skillet over medium high heat, add onion, garlic, ginger and spices. Cook for 10-12 minutes until onions are slightly caramelized. Cool completely.
Stir in 1 cup of sour cream and refrigerate for a few hours. Serve with pita chips or veggies.
