When I was reading the Sara Moulton cookbook my Mom got me for Christmas I came across a recipe for White Chicken Chili that I knew I would be trying. As usual, I took the recipe and made a few changes based on what I had and the availability of ingredients. For some reason I have a very hard time finding ground chicken here so I substituted turkey and I think it turned out really well.
Ingredients
4 tablespoons butter, melted
1 red onion, chopped
3 garlic cloves, chopped
1/4 cup flour
1 tbsp chili powder
1 tbsp cumin
Pinch red pepper flakes
2 cups chicken broth (1 can)
1 cup white wine
2 pounds of ground turkey
2 cans of Cannellini beans, drained and rinsed
2/3 cup plain yogurt
Salt/Pepper
Toppings such as cheese, scallions, crackers
Directions
Melt the butter in a large dutch oven and add onion, cook until soft about 6-8 minutes. Add in garlic and cook for 1 minute. Stir in the flour, chili powder, cumin, red pepper flakes and cook about 2 minutes. Slowly whisk in the broth and wine; bring to a boil and simmer 3-5 minutes
Add the ground turkey and simmer until the turkey is cooked through about 8 minutes. Add in both cans of beans, yogurt and salt/pepper to taste. Cook for 15 minutes and serve with various toppings.
This makes for a good cold weather meal and only takes 30-40 minutes to make including prep time. I am looking forward to some leftover White Turkey Chili for lunch this week.

This looks delicious! I can’t wait to try this recipe. If it’s anywhere as good a recipe as your macaroons, I know it will be a winner (those were a huge hit at Christmas for me).
