Pork Chops and Greens

Pork chops were on sale this week at the grocery store and I went searching for a pork chop recipe that had some unique flavors and was something I could just pop into the oven for a quick week night dinner. Food & Wine came through and with a few modifications I had a dinner that got rave reviews.

 

Ingredients

 

1 pound collard greens, stems removed and cut into 1 inch pieces

3 tbsp olive oil

1/2 tsp salt

1 tsp Bangkok Blend spice seasoning (or your favorite seasoning)

Ground Black Pepper

4 Pork Chops, about 1 inch thick.

3/4 cup Italian Cheese Blend

 

 

Directions

 

Heat oven to 450. Drizzle olive oil in a large baking dish and add in greens, salt, pepper and half the seasoning. Mix around until coated well.

 

Rub pork chops with a bit of oil and top with salt, pepper and seasoning. Place on top of the greens and top with cheese.

 

Bake for 18-23 minutes and let pork rest for 5 minutes before serving.

The pork stayed very juicy and the greens reduced down and had great flavor from the seasoning and cheese. This will go in the make again some day pile!
