Parmesan Chicken with Roasted Vegetables

Chicken is a dish that I only make at home, I almost never order it in a restaurant because there are so many dishes that I make at home that are easier, faster and sometimes better. Enter parmesan chicken, just use chicken breasts, panko bread crumbs, some grated parmesan cheese and a little season and it is good to go. You could even cut up the chicken breast into little nugget shapes to make a kid friendly dish that actually has real ingredients in it.

 

 

Ingredients

1- 1.5 lbs chicken breasts, cut into strips

1/2 cup panko bread crumbs

1/2 cup grated parmesan cheese

1 tsp thyme

1/4 tsp cayenne pepper

1 tbsp olive oil

Salt/Pepper

 

 

 

Directions

 

Preheat oven to 450. Combine bread crumbs, cheese, thyme, cayenne, salt/pepper in a small bowl. Dredge chicken in the mixture and place on a cookie sheet. Drizzle with a little olive oil and bake for 20 minutes until golden brown.

Simple roasted asparagus and mushrooms make a great side, just a little salt/pepper and olive oil and a roast for 20 minutes on a cookie sheet and you are good to go.

This really does taste like adult chicken nuggets Smile Although a much better for you version with only a few ingredients.

I’m with you, I NEVER order chicken when eating out.

This looks like my kind of recipe…easy, healthy, and tasty. We had roasted asparagus and mushrooms tonight also.
