The last few weeks have been so crazy! With a few family things going on, transitioning for my new job, and just living life and trying to do it all with some semblance of health. My answer for a quick dinner- a Smoked Salmon and Spinach Salad.

 

Ingredients

 

3 cups spinach

3 mini peppers, red, yellow and orange

1/3 cup brown rice (cooked)

1 small piece Smoked Salmon

3 tbsp slivered almonds

2 tbsp Olive Oil

1 tbsp Soy Sauce

1 tbsp Rice Wine Vinegar

 

 

 

Directions

Whisk together olive oil, soy sauce, and rice wine vinegar in a small bowl. In a large bowl mix spinach, peppers, ric, almonds and smoked salmon, pour dressing over salad and toss together.

I love the Asian inspired flavors and if I would have had more veggies in the house I would have loaded the salad with them! But when you haven’t been home much and only have the bare necessities you can’t really complain about still being able to make a great salad like this.
