I have had many version of this popular salad at parties and finally decided to come up with my own version! Great chilled, served with tortilla chips, crackers or even just as a salad if you added some chopped romaine.
There are so many variations that can be done with the salad, adding in black eyed peas, cucumber, jicama, and even radishes for a little extra crunch. I needed an easy to make dish for the Wines of Chile Blogger Wine tasting.
Ingredients
1 can corn, rinsed
1 can black beans, rinse
1/2 a package of cherry or grape tomatoes, halved
1/2 cup green onions, thinly sliced
1 bunch of cilantro, chopped
3 tbsp red wine vinegar
3 tbsp olive oil
1-2 teaspoons hot sauce
Salt/Pepper
Directions
Combine red wine vinegar, olive oil, hot sauce, salt/pepper in a bowl.
Add in corn, beans, tomatoes, green onions, and cilantro. Combine together and chill for a few hours.
