Bean Salad with Tuna

After a fantastic but brain tiring first day I wanted something simple, filing and healthy. Enter in a Bean Salad with Tuna, ready in about 15 minutes and will make really good lunches for later in the week.

 

Tuna is a very budget friendly, something that is usually in the pantry and vegetarian friendly (as long as they eat fish). Adapted from Everyday Food.

 

Ingredients

 

1 pound green beans, trimmed and cut

2 tbsp white wine vinegar

2 tbsp olive oil

1 can cannellini beans

1/2 small red onion, finely chopped

1 15oz can tuna

Salt/Pepper

 

 

Directions

 

Boil a pot of water, add a little salt and cook beans for 3 minutes. Rinse under cold water to stop cooking.

 

In a bowl mix vinegar, olive oil, beans, onion, tuna, salt/pepper. Stir to combine.

 

Add in cooled beans.

Served with a nice cold Spotted Cow. The BEST beer that I can only find in Wisconsin. I pick up a pack every time I am in Wisconsin visiting friends or family.

I haven’t always loved tuna but I did teach myself to like it, full of protein and if you use responsibly caught tuna you are helping support the fishing industry.
