Anytime I cook something green I think of Kermit singing It’s Not Easy Being Green. I had it going through my head the whole time I was making Split Pea Soup. After coming across the recipe in Clean Eating I knew I would be making it on a cool rainy day.
Ingredients
2 cups dried split peas
2 medium carrots, peel and chopped
2 stalks celery, chopped
1 large onion, finely chopped
2 tbsp fresh lemon juice
2 tsp dried dill
12 oz smoked salmon
Salt/Pepper
Hot Sauce
Directions
Add peas, carrots, celery, onion and 7 cups of water to a 4 qt stock pan.
Bring to boil, reduce heat and cook for 40 minutes over low to medium low heat, with the cover slightly off. You may need to skim some of the foam off to keep the pot from boiling over.
Add in the lemon juice, dill, and half off the smoked salmon. Cook 3-4 minutes.
Serve, topped with the remaining smoked salmon and a nice glass of white wine.
Traditional Split Pea Soup has ham or other smoked meat and cream but this version is made a bit healthier without the ham or cream. It could easily be made vegan if you used a bit of chipotle peppers to get that smokiness.
This was an ice thick and hearty soup and made LOTS of leftovers! A little roasted asparagus on the side never hurts either ![]()
