I had ground chicken in the freezer that I was trying to figure out what to do with and thought of chicken burgers and came across a Giada recipe on Food Network and thought I would give it a try. With some additions and changes I came up with a pretty good burger!

 

 

Ingredients

 

Mayonnaise

  • 1 cup mayonnaise (I used Smart Balance to make it a little bit healthier)
  • 1/4 cup chopped fresh rosemary, thyme and sage
  • 1 clove garlic, minced
 

Burgers

  • 1 pound ground chicken
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon red pepper flakes
  • 1 cup of panko bread crumbs
  • 4 pretzel rolls
  • Mixed Greens for each burger

 

Directions

For the mayonnaise: In a small bowl, mix together mayonnaise, garlic, and herbs; refrigerate.

For the burgers: Preheat a grill over medium-high heat. In a large bowl, add the ground chicken, 1/2 teaspoon salt, 1/4 teaspoon pepper, red pepper flakes, panko bread crumbs and 1/2 of the mayonnaise mixture. Using clean hands, gently combine the ingredients and form the chicken mixture into 4 patties. Place in freezer for about 5 minutes to help patties stay together.

Place the burgers on the grill and cook for about 7-9 minutes on each side. Transfer to paper towels and let rest for a few minutes.

Add a bit of mayo and lettuce to pretzel rolls and top with burgers.

With a side of sweet potato fries made with a bit of olive oil, sea salt, rosemary, thyme and sage and baked for about 30 minutes at 425. Crispy and delicious.

Add in a nice bottle of Dynamic California Red Table Wine from Trader Joes and you have a perfect summer dinner. This was under $10 and surprisingly drinkable. I spent about 20 minutes talking with an employee at Trader Joes and he convinced me to buy a few of the cheaper bottles, he reminded me that they have a guarantee on their products and if I didn’t like it I could just bring the receipt in.

 

He was right, this was a really drinkable wine and it was great for a low key meal of burgers and fries. I forgot that there are some really great wines under $10.
