In My 30’s

I made a list of 30 things for my 30’s on my birthday in February and I deliberately choose the whole decade instead of a year because my list was about big life decisions instead of small things to do. I re-read that post just to do a quick checkup on how I was feeling and doing. Surprisingly I have a few things to check off and a few more in the works.

 

30 Things for my 30’s

30. Run a 5K, as much as I don’t like running I feel like it would give me a sense of accomplishment.

29. Become a yoga instructor. Take the teacher training and have my practice go to a new level.

28. Continue working out 4-5 times a week. I know how important this is for my emotional and physical well being.

27. Try something new fitness related every month, it could be a class, a workout or just a new weight lifting move.

26. Learn to somewhat enjoy running, I may never like it but I don’t know until I try a whole program.

25. Go to cooking school, even if its just a short program. This is something I have been thinking about for a long time! Maybe I will take just 1 take one class or a whole program.

24. Focus on cooking unique recipes with healthy ingredients.

23. Nourish my body with healthy, whole foods. But I will still eat everything in moderation!

22. Have one of my recipes published in a cook book.

21. Learn about cheese and what each pairs with.

20. Visit Asia

19. Take a vacation by my myself.

18. Visit at least 5 new countries.

17. Fill a passport.

16. Take a 2 week trip, when in our adulthood do we ever take more than a few days off. I desperately want to take a 2 week vacation and really cherish every moment of relaxation.

15. Visit wineries in France.

14. Tour the wine country in Oregon and Washington.

13. Volunteer at a winery and learn more about the process of making wine.

12.Work in the wine industry in some way shape or form

11. Become a sommelier. This one is a big stretch but I know there are good programs out there!

10. Move to a new city, it could be in Minnesota, another state or even a new Country.

9. Continue to expand my core group of friends.

8. Seek out friendships that are truly supportive and rewarding.

7. Get a 2nd dog, Clifford really needs a friend.

6. Meet a great guy. A guy who is intelligent, goal oriented, educated, into fitness, food, travel, and wine, is affectionate and a great communicator who is truly present in a relationship. (Is that really too much to ask for ;))

5. Have a family. Up until the last few years I hadn’t really wanted kids but this is something that I do want to experience with the right person at the right time.

4. Grow my relationship with my family, including my Mom and Bill, Dad and Gloria, Paul, Alli and Katy, and my extended family.

3. Find a job I am truly passionate about.

2. Feel at peace with my life and surroundings. Whatever that may be!

1. Be myself. What you see is what you get with me, I don’t have any interest in not being 100% myself. I am not perfect but I am a strong, intelligent, determined, caring, funny, and focused.

Spicy Flank Steak

I am a proud meat eater and there are few things more delicious than a marinated, grilled piece of steak. Perfectly done at medium rare. That just says summer to me.

 

Flank steak is pretty affordable, for a 1 1/2 pound piece I paid about $6.50 and was able to get a dinner for two and leftovers for lunch. It can be a tough piece of meat but when marinated and sliced against the grain it is really delicious.

 

Ingredients

1 1/2 pounds flank steak

1 package fajita seasoning (You could make your own)

1 tbsp cumin

1 tbsp ground mustard (dry)

Pinch of Red Pepper Flakes

1/4 cup olive oil

 

Directions

 

Place fajita seasoning, cumin, ground mustard, red pepper flakes and olive oil in a plastic bag. Shake to combine.

 

Add flank steak and marinate in the fridge for at least 4 hours, remove from fridge and let sit on counter for about 5 minutes before grilling.

 

Heat a grill over medium and add steak, cook 6-8 minutes per side depending on desired doneness

 

Let meat rest for a few minutes and slice against the grin in thin strips

I served this with some bean salad, tomatoes and cucumbers and a grilled romaine heart topped with parmesan and a bit of ceasar dressing

I balance my love of meat with a big plate of veggies and the bean salad. This was a very flavor filled dinner and pretty budget friendly.
