Spicy Flank Steak

I am a proud meat eater and there are few things more delicious than a marinated, grilled piece of steak. Perfectly done at medium rare. That just says summer to me.

 

Flank steak is pretty affordable, for a 1 1/2 pound piece I paid about $6.50 and was able to get a dinner for two and leftovers for lunch. It can be a tough piece of meat but when marinated and sliced against the grain it is really delicious.

 

Ingredients

1 1/2 pounds flank steak

1 package fajita seasoning (You could make your own)

1 tbsp cumin

1 tbsp ground mustard (dry)

Pinch of Red Pepper Flakes

1/4 cup olive oil

 

Directions

 

Place fajita seasoning, cumin, ground mustard, red pepper flakes and olive oil in a plastic bag. Shake to combine.

 

Add flank steak and marinate in the fridge for at least 4 hours, remove from fridge and let sit on counter for about 5 minutes before grilling.

 

Heat a grill over medium and add steak, cook 6-8 minutes per side depending on desired doneness

 

Let meat rest for a few minutes and slice against the grin in thin strips

I served this with some bean salad, tomatoes and cucumbers and a grilled romaine heart topped with parmesan and a bit of ceasar dressing

I balance my love of meat with a big plate of veggies and the bean salad. This was a very flavor filled dinner and pretty budget friendly.

A perfect lunch for me: some protein to keep me going and a massive pile of vegetables. I love it!
