I was in experimentation mode and came across the concept of 1 List 5 Meals on My Recipes and figured why not try it? You get 5 recipes and a shopping list of everything you need. It is meal planning made very easy.

 

I headed to the grocery store and picked up everything I needed for the 5 meals plus my normal fruit, veggies, yogurt for the week. Spending $98 dollars those groceries will last me a week and a half. The boyfriend and I will get 5 dinners plus a few slides out of this. I was excited to start this little experiment.

 

The first recipe we tried was a Quick Shrimp Chowder, I had a bowl and a half and the boyfriend had 2. I think it was a hit Winking smile It was quick and easy to make and the leftover made for nice lunches.

 

 

Ingredients
  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped
  • 2 (10 3/4-ounce) cans cream of potato soup, undiluted
  • 3 1/2 cups milk
  • 1/4 teaspoon ground red pepper
  • 1 1/2 pounds medium-size fresh shrimp, peeled (I used frozen)
  • 1 cup (4 ounces) shredded Monterey Jack cheese

 

Directions
  1. Melt butter in a Dutch oven over medium heat; add onion, and sauté 8 minutes or until tender.
  2. Stir in cream of potato soup, milk, and pepper; bring to a boil.
  3. Add shrimp; reduce heat, and simmer, stirring often, 5 minutes or just until shrimp turn pink.
  4. Stir in cheese until melted. Serve immediately.

Saturday Night Supper

After a day full of a hardcore workout, errand running, cooking, and video making I was ready to sit down and have a relaxing evening. I figured tonight would be a good night to use a coupon for a free Newman’s Own Thin and Crispy Pizza from Food Buzz. I am not a normally a big frozen pizza fan but this was pretty good! It had large pieces of tomatoes and the crust got nice and crispy. I would buy it again if in a pinch for dinner.

Coopers

I got a surprise this week and got to have lunch with a girlfriend! She lives on the opposite end of the metro from me and it can be hard to get together during the week. I loved getting a text asking about lunch plans :) I met her at Coopers in St. Louis Park for a lunch out on the patio and a bit of jewelry shopping after.

 

Coopers has been open at least a year and I have surprisingly never been! I was hoping it would be great but no luck there. I ordered the farro and spinach salad and it was ok. I substituted green goddess dressing for honey mustard since I despise mustard. That helped with the flavor but it was missing some bulk. It needed a whole bunch of veggies to jazz it up.

Jess had the Wee lunch deal where you have your choice of a few sandwiches, a beverage and tip is included for $8.99. That’s a great deal but the food was just ok. She opted for the fish and chips and as an Irish Pub it should be one of their specialties. Not so much. Dry fries, and the fish portion was tiny. I guess that’s what you get for $8.99

I might go back for drinks but I’m not sure if I would go back for lunch again. Our service was a bit slow, the brought me the wrong dressing, our beverages took quite awhile to be refilled. Our server was friendly but the speed of service was just a little too slow for a weekday lunch. There are so many places that I have never been in the Twin Cities and I rarely go back unless I really love it. At least it was a beautiful day outside and we wondered around Charming Charlie and both found fantastic deals on costume jewlery. If you have one of these in your area, check it out! Great prices and the store is so organized. Done by color it is just fun to wander around around and see all the fantastic and fun things they have.

 

Check out my $2 dollar black necklace and earrings, great deal for a basic piece! (I look very different when I have my hair up in a bun, anyone else notice that about themselves?)

I got a set of 5 stacking rings, I can only fit 3 on my oddly shaped fingers but I love that I can mix them up to coordinate with what I am wearing.

You’ve seen this floating around the blog world and I am excited to play along :) This comes at a great time after having the blog hacked and realizing I almost lost all of my posts and hard work. I don’t tend to be all that controversial on the blog, I keep my inner anger to myself ;) I don’t write about politics, express anger towards a topic or others, but coming back to blogging after a long break after Mike and I broke was controversial. I got a few very negative emails from people in his life that don’t know the whole story. I’m not going to say bad things about that situation but there are always two sides and I have really learned just how one sided people are.

Even though I didn’t end up going on the trip, showing how to pack a carry on bag for 9 days has gotten a lot of web hits. The importance of organzing, picking colors that go well together, avoiding baggage fees, and having clothes to layer with is a skill everyone should have. Having a well packed bag saves so much time and energy on vacation!
