Strolling through Costco I came across a whole package of fresh figs. I nearly jumped up and down with excitement! Fresh figs. They are so hard to find in Minnesota and I contemplated eating the whole package right then. But alas, I came up with a great salad to use them in.

 

But I will be eating the rest of the container and will do it quickly!

 

Ingredients

 

4 Fresh Figs, sliced

5 Large Handfuls Spinach

Red, Yellow, Orange Peppers, sliced

Peapods, a few handfuls

Cherry Tomatoes, 3/4 cup cup

Parmesan, thinly sliced

 

 

Balsamic Fig Vinaigrette

 

1 tbsp mustard

1 shallot, finely diced

1/4 cup olive oil

2 tbsp Fig Balsamic Vinegar

 

Directions

 

Combine mustard, shallot, olive oil, fig balsamic vinegar and whisk together with a fork. Set aside.

 

Combine figs, spinach, peppers, peapods, tomatoes in a large bowl. Add in thinly sliced Parmesan. Top with dressing and serve!
