Shrimp Pad Thai

I love Thai food and am working on building my tolerance to spicy foods and pad thai is a great way to train my tastebuds. This is also a dinner that is ready in about 20 minutes!

 

Ingredients

 

1/2 box of Angel Hair pasta

1/4 cup Teriyaki Sauce

2 tbsp hot water

3 tbsp creamy peanut butter

1/2 tsp Sriracha

2 tbsp sesame oil

1 clove garlic, finely diced

1 lb shrimp, peeled and deveined

4 cups sugar snap or snow peas

Chopped Cilantro for garnish

Handful of peanuts for garnish

1 lime, wedged

 

Directions

 

Boil water and cook pasta according to directions.

 

In a small bowl combine teriyaki sauce, hot water, peanut butter and Sriracha. Whisk together and set aside.

 

While pasta is cooking, heat sesame oil in a non stick pan and add shrimp and garlic, cook about 2-3 minutes or until cooked through.

 

Add sauce and cook for about 2 minutes, until the sauce thickens. Add in pasta and peas and stir until combined.

 

Serve in a deep bowl and garnish with peanuts, cilantro and lime.
