Quick and easy, go to meals that are healthy and can be eaten on the go are a necessity, especially during the busy summer months. Just this morning alone I have already gone to the gym, been grocery shopping, cleaned out the car, had the tires rotated and breaks checked and made my lunches for the next few days. How’s that for productive! A quick pasta salad that I can eat for days is a great time saver, especially with lots of fresh produce that is in season.
Ingredients
1 zucchini, chopped
1 squash, chopped
1/2 pint of cherry tomatoes
1 red pepper, chopped
1/4 of a red onion, finely diced
1 box of shell shaped pasta
Pinch of Red Pepper Flakes
1/2 of a bottle of Newman’s Own Parmesan Garlic Dressing
Salt/Pepper
Drizzle of Olive Oil
Directions
In a large bowl combine zucchini, squash, cherry tomatoes, red pepper, onion, pinch of red pepper flakes.
Cook pasta according to directions, but make sure it is a bit al dente. Run cold water over it and top with a bit of olive oil. Just to keep it from sticking.
Combine cooled pasta with vegetables, top with salt/pepper and dressing. Serve immediately or chill.
Now that I have inhaled my lunch I am off to continue with my busy day! But I did thoroughly enjoy sitting out on the porch in the rain thunder clouds SUN! The sun just made a nice appearance as I am finishing this post. We will be quickly climbing back into the 90’s. I really did love that hour of 60 degree temperatures.
