I saw Jessica at How Sweet It Is make a Strawberry Margarita with a simple syrup and I immediately thought of cherries. I looked through the cabinet to see what I could come up with and vodka, lemon sparkling water, fresh cherries and simple syrup and realized it would make a delicious Cherry Vodka Cooler. Not too sweet, a bit tart and a hint of sparkle. What’s not to love about that. Thanks for the inspiration Jessica!
In a perfect world I could sit out by a pool, having someone bring me these beautiful drinks while I read magazines and get a massage. But I live in the real world and just scrubbed a cutting board and the blender down right away so they wouldn’t stain red.
Ingredients
2 ounces of vodka
8 ounces of lemon sparkling water
3/4 cup of cherries, pitted and chopped
1 cup of simple syrup
Directions
Make simple syrup and let cool, 1 cup of sugar and 1 cup of water over low heat. Stir to combine, remove from heat and let cool.
In a blender mix cherries and cool syrup, mix until smooth
In a cocktail glass mix, ice one ounce of vodka in each glass, top with 4 ounces of sparkling water in each glass, top with cherry mixture. Stir to combine.
Now I need to go scrub my fingers to remove that lovely cherry red hue
But I will then be sitting out on the porch trying not to melt in this steamy, hot and humid Minnesota heat. But I am NOT complaining, it is way better than –15! Clifford says hello, he was very interested in this cocktail. He managed to snag a few cherry pieces and was following me around with these eyes saying please Mom make me one. Sorry Clifford, no adult beverages for you.
