Fresh ingredients are what make summer so amazing, especially when corn on the cob is available. It might be my all time favorite food, behind cheese. I came across the Tricolor Salad in Everyday Food and knew I would make a version of this.
While grocery shopping I was picking up ingredients and noticed that radicchio was 4 times more expensive than red cabbage. Radicchio went right back on the shelf and red cabbage went in the cart. I love using great ingredients but when you get similar flavors for a much better price it makes a lot more sense.
Ingredients
1/2 of head of red cabbage, chopped
1/2 of a seedless cucumber, diced
3 ears of corn, corn removed
2 tbsp red-wine vinegar
1 tbsp olive oil
2 tbsp grated Parmesan
1 teaspoon honey
Pinch of red pepper flakes
Salt/Pepper
Directions
In a small bowl whisk red wine vinegar, olive oil, Parmesan cheese, honey, red pepper flakes, salt/pepper.
In a large bowl combine cabbage, cucumber, and raw corn. Top with dressing and serve.
This would be a great potluck salad, tons of color, vegetarian and budget friendly.
