Our monthly get together for our Girls Night Out with the MN Food Bloggers has become one of my favorite evenings of the month! We try to get together on the third Wednesday of the month for food, wine, conversation and laughter. And there is a lot of laughter. last night we headed to Caribe Bistro in St. Paul and 12 of my fellow food blogging ladies got together to try some Caribbean inspired dishes. The half price wine didn’t hurt either
Some of the bottles we shared around the table-
Heidi (one of the owners) and her husband welcomed us and brought us delicious appetizers of yuca with curried spinach and a pineapple aioli. At first we were well mannered and only took half of one but as the second plate came out each woman was on her to get one piece of the yuca goodness.(It was a bit dark in the restaurant so my pictures didn’t all turn out)
A few of us agreed to share food (it would be more unusual if we didn’t share food, we are all food bloggers) and made sure we each ordered something different. I tried the Jamaican Rundown which is a coconut stew, slow-cooked, with crab, carrots, onions, peppers,
and sweet potatoes, served with jasmine rice.

It was warm and comforting, the flavors of coconut and crab really came through. A few of us had it and there was not much leftover.
Mofongo changes daily and it is a classic Puerto Rican dish made with plantains that are first fried,then mashed with garlic, salt pork, olive oil, salt, and pepper, using a mortar and pestle; then stuffed. The mofongo was shrimp and the beans and shrimp were perfectly seasoned with garlic. The next time I go back I will try that, so I can have a whole dish of the beans. And I am not even a big bean eater!

Jen got Piñon (Puerto Rican Casserole) a layered casserole with plantains and seasoned ground beef, topped with sauteed green beans. Served with white rice and stewed kidney beans. Again, the beans. So delicious! When you’ve had some wine and you get talked into putting on the Carmen Miranda hat, and then they take pictures to further document your willingness to embarrass yourself. Nothing new there
